Flattened rice tossed with peanuts, curry leaves and a squeeze of lime — light, fluffy and ready in minutes.

Ingredients

  • poha2 cups
  • peanuts0.25 cup
  • onion1
  • curry leaves1 sprig
  • lime0.5
  • turmeric0.25 tsp

Method

  1. 1Rinse the poha until just soft and drain well.
  2. 2Temper mustard seeds, curry leaves and onion in oil; add turmeric.
  3. 3Fold in the poha and peanuts, finish with lime and coriander.
